These hors d’ oeuvres are a twist on the usual cracker, using a crisp slice of cucumber instead. When combined with the smoky taste of salmon, tangy cream cheese, and salty capers, they make for a wonderfully light, fresh-tasting appetizer. And though they look as if you’ve fussed over them for hours, they’re actually quick and easy to make.
Salmon Cucumber Hors d’ oeuvre
- Cucumber
- Smoked Salmon
- Cream Cheese
- Capers
1. Wash and dry cucumber. If you want to make your slices look as mine do, peel like this:

2. Slice cucumber. (Of course, you’ll want to slice them thinner than shown here. This was merely done to illustrate the striping.)

3. Then layer a bit of salmon, followed up by some cream cheese. I’ve used a decorating/frosting tip. The cream cheese works best if it’s been allowed to soften (outside the fridge) for a while first.

4. Add a few capers. They’re very salty so I don’t recommend using more than three!
When I’m entertaining, I like to put these together just before the guests arrive, to keep them at their freshest.
