Summer isn’t officially over for several more weeks and the temperature (and the going-to-need-another-shower-today humidity) are certainly letting us know it! With this kind of weather no one feels like cooking OR eating very much, and certainly nothing too heavy. Which is nice because I’m not feeling like doing a whole lot of cooking right now either.
That’s why this super refreshing watermelon bowl is so great – for a snack or a quick side dish. It’s simple to make. And cute too, don’t you think? I chose the mini seedless watermelons so each guest gets their own half. I also chose to make melon balls, but you can cut them any way you like. Just chill the watermelon first. Place them in a regular bowl and sprinkle a little feta cheese and fresh, minced mint and gently toss it all together. You can also drizzle a little balsamic vinegar over the mixture for a zestier flavor (or make it available for your guests to determine their own amount). Scoop the mixture into the hollowed fruit bowl, add a little mint garnish and refrigerate until you’re ready to serve them. If that’s not going to be for a few hours, I’d cover them. Best if served that day. That’s all there is to it!
