Summer is officially here and most of us are looking for lighter fare and ways to spend less time in the kitchen. So I’ve gathered up just a few of my favorite salads. They’re an easy, healthy and delicious way to eat gluten free. Just make sure to check those bottled salad dressings for hidden wheat or gluten!
This Ancho Chicken Salad is seasoned with Ancho chili powder. Made from the poblano chili (the sweetest of the peppers), it has a mild, smoky flavor that gives this salad its South-of-the-Border flavor. Topped with my Avocado Yogurt Dressing and you’ll feel feel you’re on vacation for sure.
Originally made with pears, apples make a delightful summer substitute for this nutritious salad which is full of flavor, from the earthy tasting beets, tang of cheese and peppery arugula to my Orange Balsamic Salad Dressing.
Light, fresh and loaded with healthy vitamins and antioxidants, this Strawberry Baby Green Salad is the quintessential summer salad. It’s super quick and easy to put together (getting you out of the kitchen fast). Even my sweet, tangy Summer Strawberry Vinaigrette, which goes with it so perfectly, takes only minutes to make!
My Vegan Quinoa Citrus Salad is light tasting, but don’t be deceived by the name! This salad is surprisingly filling and packs a nutritional punch, due in large part to the healthy, fiber-rich, ingredients. It’s also got over 22 grams of protein per serving! Drizzle it with my Orange Dijon Dressing OR my Orange Balsamic Dressing for a tangy, citrus flavor. Yum!
Super refreshing, this Feta and Mint Watermelon Bowl is so great for a summer snack. It’s easy to make and creates it’s own little bowl so there are no dishes to wash up! Drizzle a little balsamic vinegar over it for a zestier flavor.
