This is another healthy, easy-to-make soup that can be ready in less than 30 minutes. Plus, it’s only 90 calories a cup!
Much of it’s delicious flavor comes from the South African Smoke Seasoning. This is a wonderful seasoning that can also be used as a rub for meats, sprinkled on fish, tofu or vegetables and can be purchased at Trader Joe’s or online (see below for more information about that.)
- cooking oil (your choice) - 1 Tablespoon
- minced garlic - 1 Tablespoon
- chopped white or yellow onion - 2 cups
- seeded and chopped bell pepper (red, yellow or orange) - 1 cup
- chopped carrots - 1 cup
- chopped celery - 1 cup
- potato (peeled and diced) - 2 cups
- cauliflower (trimmed and separated) - 1 head
- organic gluten-free vegetable broth (or chicken broth, if you like) - 8 cups
- Bay leaf - 1 large
- *South African Smoke Seasoning - 2 teaspoons
- sea salt - 2 teaspoons
- ground pepper - 1/2 teaspoon
- canned coconut milk or cream (optional - but a nice addition!) - 1 cup
Saute garlic, onion, and red (yellow or orange) pepper in 1 Tablespoon oil until the onion is nearly translucent. Add the broth, carrots, celery, potatoes, cauliflower and bell pepper and simmer for 15 minutes or so. Then add the African Smoke Seasoning, salt and pepper and cook until vegetables are tender. Blend with immersion blender until creamy OR cool a bit so you don't burn yourself, and blend in a blender. You may also leave it somewhat chunky, if you prefer. Add the coconut milk or cream (if you like) and stir through. Taste and adjust seasonings.
Makes approximately 12 cups.
The Trader Joe's website states that their South African Smoke Seasoning comes from African-grown paprika that is slow-smoked for over 48 hours over a sustainable African hardwood called Acacia Saligna. The process enriches the paprika with a smoky roasted flavor.
If you have a Trader Joe's near you, you may purchase this 1.76 ounce grinder for $2.29. When I looked it up on Amazon, I found it for $6.97 (with free shipping - though I imagine the price they're charging more than covers that!)
