The holidays are over and if you’re like me, your New Year’s resolution may include things like eating healthier, working out more, and/or losing weight. But that shouldn’t mean giving up on taste, should it? That why I like this warm, earthy, tangy, sweet salad.
Once the beets are roasted, it takes no time at all to put this together.
- Kale - 1 1/2 lbs
- Beet Greens - 1 Bundle
- Roasted Beets -
- olive oil - 1 Tablespoon
- minced garlic - 1 Tablespoon
- red onion - 2/3 cup sliced or chopped
- vegetable stock (or chicken stock) - 1/2 cup
- salt and pepper - to taste
- Red wine vinegar - 2 - 3 Tablespoons
- roughly chopped walnuts (optional) - 1/4 cup
- Feta cheese (or a tangy non-dairy cheese) - 1 Tablespoon
Directions for Roasting Beets: Preheat the oven to 400 degrees Fahrenheit. Wash the beets thoroughly, leaving the skins on (they will be easy to peel once they're cooked), and remove the greens. You'll be using them in a bit.
Place the beets in a small baking dish with a lid or on a sheet of aluminum foil on a cookie sheet. Drizzle with olive oil and cover or fold the ends and sides of foil (creating a small package). Depending on their size they will need to be baked for anywhere from 35 to 60 minutes. A knife should slide easily through the largest beet. Cool until you can handle them, and then remove the skins. Cube or julienne them for your salad and set aside.
The beets can be made a couple of days in advance - just reheat them a bit before adding them to the salad!
Directions for Making the Salad:
Wash and tear the greens into large pieces. Saute garlic and onions in olive oil over a low to medium heat for a few minutes, until onion has softened, but before garlic turns brown. Add greens and vegetable stock and cover the skillet or pot. The greens may be practically overflowing your skillet or pot until they cook down.
Season with salt and pepper. Add julienned or cubed beets and drizzle with 2 - 3 Tablespoons red wine vinegar. Toss lightly and sprinkle with chopped walnuts and Feta cheese (or a non-dairy cheese of your choosing).
Serve immediately! Makes approximately 4 servings.
