Grilled cheese sandwiches have always seemed like comfort food to me, and part of their appeal is that they’re so quick and easy to make. This one is no different, except for the flavor. The addition of pesto is fantastic!

The gluten free bread toasts up crisp and buttery on the outside, while still being soft and tender on the inside.
Pesto Grilled Cheese
Gluten free bread (like Udi’s or Rudi’s)
Swiss cheese, Gruyere, or another of your favorites, including a dairy-free version
*Pesto sauce – homemade or store bought
Butter or non-dairy butter
Warm a skillet or griddle. Spread a thin layer of butter on one side of the bread only. Lay it butter side down into the skillet or griddle. Add the cheese, a scoop of pesto (smoothing it), and the second slice of bread (butter side up). When the cheese begins to melt and the bread is golden brown, flip the sandwich and toast on the other side.
