I’ve been making this pasta salad for years and years and it’s always been a family (and company) favorite. In fact, it disappears pretty quickly whenever I make it. It’s yummy served cold or at room temperature. Honestly, sometimes no one can wait for it to cool off and we’ve eaten it hot.
It’s also great because it’s so quick to throw together, especially if you purchase a ready-made pesto sauce. Of course, you can always make your own. Which can be made ahead of time. Here is my pesto sauce.
My “secret” ingredient is the marinated vegetables and the juice they’re packed in. Just be sure they’re gluten free! I know it may surprise some of you to learn there could be gluten hiding inside that jar of veggies, but since it’s packed in vinegar, you’ll want to make sure you know what kind of vinegar. (For more information about that, see the link below.) This brand actually states that it is gluten free right on the jar.
- GF pasta - 12 oz. (340 grams) rotini or spirals
- pesto sauce - Homemade or store bought
- marinated veggies - 16 oz. (473 mL)
- broccoli - 1 cup (chopped finely)
- red bell pepper - 1/4 (julienned)
- red onion - 1/2 minced
- cherry tomatoes - yellow and red (sliced in half)
- parmesan cheese - sprinkled on top
- fresh basil leaves - for garnishment
Prepare the pesto sauce - if making homemade. This can also be made several days ahead of time, if you like.
Put a pot of water on to boil the gluten free pasta and cook as instructed on the package. Make sure to drain it in a gluten free colander!
Wash, chop, julienne, slice and mince the fresh vegetables.
Drain the jar of marinated veggies. IMPORTANT! SAVE the juice! Chop up the veggies.
Once the pasta has been cooked and drained, stir the the prepared pesto sauce through the noodles until they're all coated with yummy green goodness.
Add all of the veggies and mix them in well. Then pour the marinated vinegar over the pasta and stir through. Sprinkle with parmesan cheese, a few small basil leaves, and chill. Or serve now if you're like us and can't wait. :D
