This open-faced sandwich is full of flavor from the first bite. Starting with a lightly toasted slice of really good gluten free bread, like Rudi’s original or multigrain or Udi’s white, whole grain or millet-chia. Spread a little gluten free Dijon mustard and add the smoked goodness of salmon, sweet red onion, and sliced avocado. Top with a few salty capers and you’ve got a light, healthy, delicious lunch or snack.
