There are actually loads of ideas out there for making a delicious gluten free breakfast or brunch for mom. I’ve selected just a few simple ones because I recall seeing the pride on my own children’s faces when they were little and knew what good helpers they’d been. So I wanted to choose things I knew wouldn’t be too difficult to make, and would allow even little ones to help – whether it be cracking eggs, mashing tofu, arranging or dipping fruit, cutting pancakes, or sprinkling sweetener on top.
The first is a simple, low-calorie idea. Just a helping of plain Greek yogurt (or a non-dairy version), topped with mom’s favorite fruits and a drizzle of honey or agave on top. It’s light, easy and delicious. And doesn’t it look pretty? And moms are all about pretty.

For something different and just a little exotic, the Curry Scramble combines the savory flavor of curry with the sweetness of raisins. It can be made with eggs or tofu. These gluten free pancakes were made with a ready made mix (like King Arthur’s). Not everything has to be from scratch to be good. They also don’t need to be shaped like hearts to be yummy. But they are kind of sweet that way. To get that “heart” shape, simply spoon the batter onto the griddle or skillet that way, or use a cookie cutter and cut them afterward. Top with a little fruit and a sprinkling of powdered sugar or mom’s favorite syrup, and enjoy!
