Yummy! That’s how I would describe this chocolate chocolate chip banana bread. It’s moist (even though there’s only a couple of Tablespoons of oil in the whole thing!), chocolatey, and lightly flavored with banana.
You can make it both egg free and dairy free, if you like, and there’s no xanthan gum or guar gum in this recipe (for those sensitive to that).
And you know what else? I don’t think anyone will even know that it’s gluten free!
- GF flour mix - 1 1/2 cups
- coconut sugar (Sucanat, organic cane sugar or honey) - 2/3 cup OR 1/3 cup agave
- unsweetened cocoa powder - 1/4 cup + 2 Tablespoons
- baking powder - 2 teaspoons
- baking soda - 1 teaspoon
- sea salt - 1/4 teaspoon
- ground cinnamon - 1 teaspoon
- egg - 1 or *1/4 cup egg replacement
- milk - 1/2 cup (of your choosing)
- oil, coconut oil, butter or non-dairy butter - 2 Tablespoons (gently melted)
- ripe bananas - 3
- mini chocolate chips - 3/4 cup
Preheat oven to 350 degrees Fahrenheit. Spray loaf pan.
Measure and whisk all the dry ingredients in a large bowl, including the mini chocolate chips.
In a separate bowl or blender, add the liquid ingredients and whip together: egg, oil, and milk. (Also the sugar, if using a liquid one.) Mash the bananas (if using a bowl), or add them directly to the blender.
With a spatula or spoon, fold the liquid ingredients into the dry mixture and stir together until no dry bits remain. The dough will be sticky. Scoop into the prepared loaf pan and smooth the top with a spatula or knife.
Bake in the oven for a 45 - 55 minutes. Temperatures may vary so keep an eye on the bread. Mine took 50 minutes. Toothpick should come out clean.
Cool on a rack before slicing.
Keep covered in an airtight container. Because it's made with so little oil, it's best if eaten on the first or second day. This bread may be frozen, if properly sealed.
*To make an egg replacement: Measure 1 Tablespoon chia seeds or ground flax seeds and 3 Tablespoons hot water. Stir and allowing to set until it forms a thick gel. Then add as you would a regular egg.
