I’ve always loved Broccoli Cheese soup, but those of us with Celiac or gluten intolerance have to be careful ordering it when we’re out. It’s usually thickened with flour (as are most cream soups and sauces). A big no-no for us!
And unlike many other versions, which use a whole stick of butter and cream, mine is also lighter calorie-wise. But don’t worry. You don’t have to sacrifice flavor to get a rich, creamy tasting soup! You can use mild or sharp cheddar, Jack, or even Gouda. Pepper Jack is also a really yummy choice when you want a bit of a kick. Or if you like, you can make this totally vegan simply by swapping out the cheddar cheese for your favorite non-dairy cheddar. Daiya is a nice brand that melts well.
Enjoy the soup chunky (my personal favorite) or blend it smooth (which makes it a great mug-sipping soup, or an elegant first course); the choice is yours.
- onion - 1 medium - chopped (approximately 1 cup)
- garlic - 1 Tablespoon (minced)
- GF flour mix - 1/4 cup
- vegetable broth (may use chicken broth, if you prefer) - 4 cups
- milk (of your choosing) - 3 cups
- cheddar - 3 cups (grated)
- *salt - 3/4 - 1 teaspoon
- pepper - 1/4 teaspoon
- olive oil, grapeseed oil, or another - 1 Tablespoon
- **broccoli - 1 lb. (cut into small pieces)
Measure 1 Tablespoon oil into a soup pot. Add the chopped onion and garlic. Saute until onion begins to turn translucent (just a few minutes). Sprinkle the GF flour mix over the mixture and stir together, cooking for an additional minute or so.
Add the broth and the chopped broccoli and simmer on low for about 15 minutes. Then add the milk and cook for another 5 minutes (or until the broccoli is tender).
Stir the grated cheese into the soup. If it's too thick, you may add a touch more milk or broth. Season with pepper and salt. As the cheese already contains salt, I recommend adding 1/4 teaspoon at a time until it's to your liking. Otherwise, you might wind up with soup that's too salty.
*NOTE: If you're using a non-dairy cheddar, please bear in mind it's often much saltier than regular cheddar cheese, so season accordingly!
** The weight of the broccoli includes only the florets.
