I’ve always liked the versatility of tofu. It was my children’s first source of protein when they were babies. My daughter, in particular, just loved it. That’s her to the right. Wasn’t she a cutie? We called her way of eating it “hoovering.” We had only to lay a few cubes of it on her high chair and she would plop her face down onto the tray and suck them up. It was quite adorable – and funny. =)
Okay, now where was I??? Oh yeah. Tofu.
Aside from the health benefits tofu provides, its mild flavor makes it a wonderful addition to just about anything, as it will absorb whatever it comes in contact with. I’ve added it to casseroles, stir fry, baked goods – just about anywhere your imagination will take you.
