Whether Dad is on a health food kick or looking for something sweet, there are plenty of gluten free choices to be made here. And as with Mother’s Day I’ve tried to include things that children could help make for their daddies.
Let’s start with breakfast…
Pumpkin Protein Pancakes are a delicious way to start out the day. They’re not only tasty, but they’ve been enriched with protein and the healthy goodness of pumpkin.
Served with a warm, homemade blueberry compote, these mouthwatering Lemon Blueberry Pancakes are another great choice to start out Dad’s special day.
When lunch or dinner rolls around the choices abound…For the Dad watching his weight, there are countless options beginning with a salad.
But a salad doesn’t have to mean just a bed of lettuce. This Ancho Chicken Salad with the creamy Greek Yogurt Avocado dressing is filling, healthy AND delicious!
And these vegetarian Spicy Black Bean & Sweet Potato Patties are also great on a salad or a bun. Topped with guacamole and your favorite salsa and you’ve got a real South-of-the-Border taste!
Another great vegetarian choice is my Sweet Potato Bean Burger with roasted peppers and caramelized onions.
And for the Dad who prefers fish? We’ve got him covered too.
This Garlic and Rosemary Salmon is loaded with Omega-3, light, quick and easy to prepare (so you can come out of that kitchen and spend more time with Dad).
These Salmon Patties with Dill Sauce are super tasty and…like the salmon above, quick and easy to prepare. Served on a salad, with his favorite side dish, or on a gluten free bun, it’s a nice, light change from the usual hamburger.
But don’t despair if your Dad likes a heartier fare.
The enchilada flavoring of this dish lends a spicy twist to the usual turkey meatloaf, and you can prepare it ahead of time and just pop it into the oven on Father’s Day.
Your family is sure to enjoy these Enchiladas, whether you make these with turkey, chicken or another meat of your choice. And like the turkey/meatloaf above, you can prepare these ahead of time and bake them when you’re ready!
Who doesn’t love a slice of pizza? And one of the great things about making it yourself is that you can personalize it as you like. Consider making mini pizzas or setting out a bunch of toppings so Dad (and everyone else) can design their own!
And when it’s time for something sweet?
Super rich and yummy, these Coconut Pecan S’more Bars are reminiscent of the s’mores we ate as kids. Yet they aren’t made with marshmallows and don’t require a campfire.
Or maybe Dad likes the simple pleasures of peanut butter cookies and a cold glass of milk. And they can be made without dairy OR eggs.
And there’s always these Almond Chocolate Chip cookies that don’t require any grain at all. They can also be made without dairy or eggs.
Or for the Dad who likes a little added protein to his goodies, these Chocolate Banana Muffins contain almost 9 grams apiece and use very little sugar, and no butter or oil. Yet they’re still moist and delicious.
One of my favorites is cheesecake! And this one doesn’t need to be baked. Top with whatever fruit you like. Nutella is also a seriously decadent crowd pleaser!
